Dairy free banana pudding recipe
One of Superman’s favorite desserts is banana cream pie. I’d been working on a dairy free banana pudding recipe for quite awhile now, but hadn’t perfected it. Until now! My original recipe does use organic sugar, so it’s not “Paleo,” but it is dairy-free and a great once-in-awhile treat! I have, however, made a note on subbing out the sugar for honey or pure maple syrup, if you are avoiding refined sugars.
This dairy free banana pudding recipe is a delicious treat for any special occasion, or even just a weeknight treat! The best part is that it’s simple to make, and made with ingredients that you most likely have sitting in your pantry and fridge.

- 3 eggs beaten
- 1/2 cup organic sugar (you can sub honey or maple syrup but see note on tapioca flour below)
- 1 dash salt
- 1 well-mashed banana
- 2 TBSP tapioca flour (increase to 2 TBSP + 2 tsp tapioca flour if using honey or syrup as sweetener)
- 1 cup full-fat unsweetened coconut milk
- 1 cup almond milk
- 1 tsp vanilla
- 1 large banana sliced, for garnish
Ingredients

- In a saucepan, whisk the sugar (or syrup or honey) and eggs together.
- Add in remaining ingredients except vanilla.
- Stirring constantly, heat over medium heat until thickened, about 10-15 minutes.
- Remove from heat and stir in vanilla.
- Place in serving dishes and refrigerate until completely chilled.
- Enjoy!
You can skip putting the mashed banana in to avoid discoloration in the pudding, it just won't be banana-y. I opted for mixing in the banana, because it makes the pudding amazing!
