In a saucepan, whisk the sugar (or syrup or honey) and eggs together.
Add in remaining ingredients except vanilla.
Stirring constantly, heat over medium heat until thickened, about 10-15 minutes.
Remove from heat and stir in vanilla.
Place in serving dishes and refrigerate until completely chilled.

Recipe Notes
You can skip putting the mashed banana in to avoid discoloration in the pudding, it just won’t be banana-y. I opted for mixing in the banana, because it makes the pudding amazing!
