We usually eat chicken a couple times a week at our house. I’m all about quick & simple, so I often just chop some chicken up, throw it in a skillet with some veggies and seasoning, and call it good. I think I’ve only made stuffed chicken once before, and it wasn’t anything to write home about.
I looked in my pantry and saw a jar of artichoke hearts and decided I would liven up a typical weeknight meal to be a little more fancy, but with very little work. I grabbed the gouda cheese out of the fridge and voila! Dinner was born.
