Ingredients
4
boneless, skinless chicken breasts
1
cup
chopped artichoke hearts
1/2 to 3/4
lb
gouda cheese
salt and pepper
to taste
garlic powder
Instructions
Preheat oven to 350 degrees and line a baking sheet with foil or lightly grease a 9×13 pan with oil.
Lay the breasts flat on a cutting board.
Using a
meat tenderizer
, beat the meat until it is flattened a bit.
Cut a slit down the middle (don’t cut all the way through the meat).
Stuff the open slit with some of the chopped artichoke hearts and a chunk of gouda cheese, then sprinkle with salt, pepper and garlic powder:
Fold the outer part of the meat over the artichoke and cheese and use a toothpick to hold in place:
Sprinkle with salt, pepper and garlic powder.
Bake in oven for about 20-25 minutes, then top with
grated
gouda cheese and broil for an additional 5 minutes, until the cheese is browned.
Let cool for a few minutes before eating!
