We usually eat chicken a couple times a week at our house. I’m all about quick & simple, so I often just chop some chicken up, throw it in a skillet with some veggies and seasoning, and call it good. I think I’ve only made stuffed chicken once before, and it wasn’t anything to write home about.
I looked in my pantry and saw a jar of artichoke hearts and decided I would liven up a typical weeknight meal to be a little more fancy, but with very little work. I grabbed the gouda cheese out of the fridge and voila! Dinner was born.
This Artichoke-Gouda Stuffed Chicken is tender, flavorful and a wonderful weeknight or weekend meal! It would be great for company or just for your own family!

- 4 boneless, skinless chicken breasts
- 1 cup chopped artichoke hearts
- 1/2 to 3/4 lb gouda cheese
- salt and pepper to taste
- garlic powder
Ingredients

- Preheat oven to 350 degrees and line a baking sheet with foil or lightly grease a 9x13 pan with oil.
- Lay the breasts flat on a cutting board.
- Using a meat tenderizer, beat the meat until it is flattened a bit.
- Cut a slit down the middle (don't cut all the way through the meat).
- Stuff the open slit with some of the chopped artichoke hearts and a chunk of gouda cheese, then sprinkle with salt, pepper and garlic powder:
- Fold the outer part of the meat over the artichoke and cheese and use a toothpick to hold in place:
- Sprinkle with salt, pepper and garlic powder.
- Bake in oven for about 20-25 minutes, then top with grated gouda cheese and broil for an additional 5 minutes, until the cheese is browned.
- Let cool for a few minutes before eating!
