Oh, salmon. Another great fish. I have a confession to make, though…I stink at cooking salmon! Until now. Friends, I have an apology to make to all the salmon I have cooked over the years, leaving them dry, sad, and disappointed.
I finally realized (I know, I must be a little dense…), I’ve been cooking it too long!!
I did a little research online and discovered that you only need to cook salmon in the oven for about 5 minutes per 1/2″ of thickness. Five minutes?!?!? I was doing like 12-15! No wonder those poor little guys were dried like leather.
This Dill Salmon recipe took a whole 1 minute to season, and 5 minutes to cook. That’s it!
Can you believe it??
You will never look at salmon the same way again.

- 1-2 lb salmon filet
- 1 tsp dried dill
- olive oil
- salt/pepper to taste
Ingredients

- Preheat oven to 425 degrees and line a baking sheet with foil.
- Pat the salmon dry, then rub with oil, salt & pepper.
- Sprinkle with dill.
- Place the salmon on the baking sheet, skin-side down.
- Roast for 5-7 minutes per 1/2 inch of thickness, until easily flaked.
