Butternut squash can be a bit intimidating. However, I discovered that our Costco carries pre-cut butternut squash (woo hoo!), which makes my life just a little bit easier.

Here is an amazing recipe that everyone will love! The pinch of red pepper flakes makes this dish just a little extra special. =)
- 1 lb butternut squash, cubed (I bought it pre-cut from Costco)
- couple TBSP coconut oil
- pinch red pepper flakes
- salt/pepper to taste
- Heat oil in skillet over high heat, add remaining ingredients and stir. Cook 10-12 minutes, stirring only a couple times, until squash is tender and crisp-brown on the outside. Enjoy!
