Caramelized butternut squash can be a bit intimidating. However, I discovered that our Costco carries pre-cut butternut squash (woo hoo!), which makes my life just a little bit easier. Grab a container and let’s start cooking!

If you don’t have access to pre-cut butternut squash, try my no-fail, incredibly easy method of cutting one up:
Servings |
|
- 1 lb butternut squash cubed (I bought it pre-cut from Costco)
- couple TBSP coconut oil
- pinch red pepper flakes
- salt/pepper to taste
Ingredients
|
- Heat oil in skillet over high heat, add remaining ingredients and stir. Cook 10-12 minutes, stirring only a couple times, until squash is tender and crisp-brown on the outside. Enjoy!

Yay! So glad you liked it, and thanks for letting me know, Lindsey!

So to make this, the squash needs to be baked first? Or raw and cubed? Excuse my ignorance, I have never worked with butternut squash before! I know, the shame!!! Lol!
Shanti Landon says
lol No prob! You can do either way! For the recipe in the video, you can bake first for easy cutting. Or, you can buy pre-cubed, and just cook it like the printed recipe! Hope that helps!
