I’ve been trying to come up with ways to use the mint in my garden, and being that it’s nice and warm today, I figured I’d experiment with a refreshing drink!
Strawberry Apple Mint Iced Beverage
2 cups water
1/4 cup chopped mint leaves (I used apple mint leaves)
1/4 apple, grated
3-4 strawberries, chopped
sweetener, if desired (I didn’t use any and thought it was great, but you could always add honey or a sweetener of your choice if you like)
Add all ingredients to a small saucepan and bring to a boil. Reduce heat a bit and let simmer for 5-7 minutes. Fill a glass with ice, and strain the liquid (removing all the fruit and mint) into the glass. Add sweetener if desired, and sip away!
Have you made a large batch of this? It sounds like a fantastic, refreshing drink to have in the refrigerator over the summer. 🙂
