Do you have a garden? Do you grow zucchini? If so, you’ve probably missed a day or two of checking on your veggies and found a gargantuan zucchini that somehow grew two feet overnight. And this is a great way to use up those huge zucchini! It’s time for some Zucchini Pizza!
Pizza is probably my favorite food. Seriously, I think I could eat pizza every day. There are so many options for toppings with this zucchini pizza recipe, but I had cheese and pepperoni on hand, so that’s what I went with!
Recipe: Zucchini Pizza

- 1 large zucchini and I mean large
- 1 14.5 oz can favorite pizza sauce I use Eden's Organic.
- cheese
- desired toppings
- salt/pepper to taste
Ingredients

- Preheat oven to 375 degrees.
- Scoop out the middle section of the zucchini so the seeds are removed and there is a nice "boat-like" center and place on a baking sheet lined with foil.
- Pat the zucchini dry with a paper towel.
- Sprinkle with salt and pepper, then generously baste with pizza sauce.
- Add cheese and desired toppings and bake for 25-30 minutes, until zucchini is tender, and cheese is golden brown and bubbly.
- Let cool for about 5 minutes, then slice into about 2" slices and enjoy!
