Scoop out the middle section of the zucchini so the seeds are removed and there is a nice “boat-like” center and place on a baking sheet lined with foil.
Pat the zucchini dry with a paper towel.
Sprinkle with salt and pepper, then generously baste with pizza sauce.
Add cheese and desired toppings and bake for 25-30 minutes, until zucchini is tender, and cheese is golden brown and bubbly.
Let cool for about 5 minutes, then slice into about 2″ slices and enjoy!
