These skillet brownies are so easy. I mean, like really easy. You could whip these up when someone is coming over unexpectedly.
You could have them waiting on the counter for your hungry little munchkins after school.
You could just make them for dessert.
Or, you could make them for no other reason than to just eat some chocolate.

- 2 eggs
- 1 cup Enjoy Life chocolate chips + a few extra for sprinkling on top (optional)
- 3/4 cup pure maple syrup
- 1/2 cup melted coconut oil or butter + extra to grease skillet
- 2 cups blanched almond flour
- 1 tsp baking soda
- 1/2 tsp salt
Ingredients

- Preheat oven to 350 degrees.
- Grease a 10-inch cast iron skillet with coconut oil or butter.
- Melt the chocolate chips and set aside.
- Whisk together the eggs, syrup and coconut oil or butter.
- Stir in the almond flour, baking soda and salt.
- Stir in melted chocolate chips.
- Pour mixture into skillet and sprinkle with extra chocolate chips, if desired.
- Place in oven and bake for about 25 minutes, until toothpick inserted comes out clean.
- Let cool for about 5-10 minutes before slicing.

These were so good. I think they were the best brownies I’ve ever eaten! I reduced the maple syrup to 1/2 cup and added some stevia. They were plenty sweet. Awesome chewiness around the edges, and lovely and moist in the middle.

Would it be possible to modify this recipe and bake it in an 8X8? This recipe looks fantastic.

I’m sure that would work fine! They’ll be thicker, though, so you’ll need to adjust the cook time appropriately. Good luck!

Does it have to be blanched almond flour? I have regular almond flour. I also have a 12′ cast iron skillet. Do you think that could work or would it be better if I increase the ingredients?

Blanched will just be finer…but it will work with regular! And you will just have thinner brownies–if you reduce the cook time you should be fine!

Do you mean the ones to sprinkle at the end? Or all of them all together? I have never tried these with eliminating them altogether…they wouldn’t be brownies then. lol But if you try it, let me know how they turn out!

Do you know if these would work in a regular, oven safe pan? I do not own a cast iron skillet. Do you think the amount of cooking time would change?

Hi, Stephanie! I often double the recipe and bake in a 9×13 pan and an 8×8 pan. The 9×13 pan usually takes around 30 minutes. Hope that helps!
