Simple Flounder Skillet
I’m pretty new to flounder. I was looking for a new fish to try, and our local grocery store had it in stock, so I decided to give it a go. Flounder encompasses several American flatfish species like gray, petrale, lemon sole, dab, fluke and plaice. The types are interchangeable when cooking, with the exception of Dover sole, a flatfish found only in European waters with firmer and tighter flesh than American flounder. {source} You can sub out any of the above fish for this recipe if desired!

The great thing about flounder is that it’s not “fishy” tasting, is very mild, and all of my kids loved it! That’s saying a lot since some fish dishes I’ve made haven’t passed the test with all of them. And the best thing about this recipe? It literally takes a couple minutes to throw together and cook, so it’s the perfect recipe for a fast weeknight dinner!

- 1 lb flounder filets
- 2-3 tsp Save the Day Alvi's Incredible Seasoning
- 1 tomato sliced
- 2 TBSP avocado or olive oil
Ingredients

- Place cast iron skillet in oven and preheat to 500 degrees.
- While the pan is heating in oven, sprinkle filets with seasoning on both sides.
- **Turn oven off**, remove pan from oven, quickly place oil in skillet, then fish, then layer sliced tomatoes on top. Sprinkle with a bit more seasoning, if desired.
- Quickly place skillet back into oven and cook for 5-6 minutes, then remove from oven and serve promptly. Enjoy!
