These peanut butter chocolate rice crispy treats will not disappoint!
Peanut butter chocolate rice crispy treats (gluten free)
I’m not really sure that you could ever go wrong with peanut butter + chocolate. Even the Huffington Post says they’re the ultimate power couple. I made gluten free rice crispy treats a month or so ago, and one night as I was falling asleep, I though, Ummm. Why have I never put peanut butter + chocolate in them??
So, the next morning, I got to work. I still had homemade marshmallows leftover, but you could use your favorite store-bought ones if you like. Really, this recipe is so simple: you’re basically taking a regular rice crispy treat recipe and just adding peanut butter to the mix, then spreading melted chocolate on top. I used dairy free chocolate chips that I buy in bulk on Amazon, but again, you could use your favorite chocolate chips here.
I bought my gluten free rice crispies at Walmart in the cereal aisle. They are not the Kellogg’s brand, they are an off brand, but taste just the same, and since the Kellogg’s rice crispies aren’t gluten-free, this was the option I had!
Involve the kids!
If your kiddos love helping in the kitchen, this is a great recipe to let them help with! My only tip would be that once you are ready to pour the rice crispies into the melted marshmallows, an adult should probably do it. You have to work fast so it doesn’t harden too fast. So, to avoid any frustrations or rice crispy mishaps, you may want to take control back at that point. =)

- 6 cups gluten free rice crispies (I got mine in a big bag at Walmart)
- 3 TBSP butter
- 1 recipe homemade marshmallows (See recipe on my site, or use your favorite marshmallows, a 10-oz bag)
- 3/4 cup organic peanut butter
- 1 package Enjoy Life chocolate chips
Ingredients

- Grease a 9x13 pan with butter or coconut oil and set aside.
- Melt the butter and marshmallows in a large glass bowl in microwave for 2-3 minutes, then stir until smooth.
- Add in cereal and peanut butter and stir quickly to combine.
- Spread into greased pan and let cool for 15-20 minutes.
- While that's cooling, melt the chocolate chips in a double boiler or in the microwave.
- Spread over rice crispy treats and let cool completely before eating. Enjoy!

In step 3, i think you meant add in cereal, not marshmallows.

I just made these squares and they are delicious. I put melted white choc on top of the dark choc and swirled it around.
