I love onion rings. As a matter of fact, before we changed our diet, onion rings would be my side of choice whenever we went to a burger joint. Nothing beats the crispy, fried taste of an onion ring.
I’ve tried some pretty good grain free onion ring recipes, but nothing that I could write home about. Until now.
The batter for these literally took me 5 minutes to put together, and the result was amazing. The batter fries into a light, crispy ring and doesn’t go sliding off the onion when you place it in the oil. From start to finish, these probably take 10 minutes to make–not bad for an old American classic!

- 1/2 cup blanched almond flour
- 3/4 cup tapioca flour arrowroot would work as well
- 3/4 cup full-fat unsweetened coconut milk
- 2 egg whites
- 1/4 cup water
- 1 tsp paprika
- 1 tsp salt
- 2 large onions
- 2 cups organic palm shortening
Ingredients

- Heat the 2 cups organic palm shortening over medium-high heat in a saucepan.
- Stir together the dry ingredients, then add in the remaining ingredients, and whisk to combine.
- Peel an onion, and slice into rings, then gently pull apart the rings.
- Dip in batter and gently toss around to coat, then using a fork, place into hot oil.
- Fry for 1-2 minutes, then flip over and fry another 1-2 minutes, until golden brown.
- Remove to plate covered with paper towel and eat promptly.

I just used this batter to fry cauliflower bits….omg! Fabulous! The only negative thing I have to say is everything stuck to the bottom of the pan.

Yes! I strain the oil, and then put into a mason jar for later! =)

Thank you for this. I followed everything exactly except I used ghee in a cast iron skillet for frying and they were so succulent. I whipped up a ranch for dipping using mayo, apple cider vinegar, paprika, dill, and onion and garlic powder. A very nice light snack during Sunday football. I’ll definitely make these again. I think using a sweet Maui onion is key too.

I made these and they were absolutely delicious!! I pretty much followed the recipe exactly except I added a few shakes of onion powder and a few extra shakes of salt and paprika. I also deep fried them in coconut oil as opposed to palm shortening.
They were the best onion rings I’ve even tasted, paleo or traditional.

Hi. I discovered this recipe like two years ago and I have made it many times! These are the BEST onion rings I have ever had!! I make them for friends and family and no one would ever guess they are paleo! I thought I’d come back and to say THANK YOU sharing this amazing recipe!
Tip: after slicing my onions I stick them in a big ziplock back and put a couple tablespoons of arrow root starch, or tapioca flour, and shake that onto the onions rings. It dries them out and helps the batter to stick on them while they cook.
