Ingredients

cup
blanched almond flour
3/4
cup
tapioca flour
arrowroot would work as well
3/4
cup
full-fat unsweetened coconut milk
2
egg whites
1/4
cup
water

tsp
paprika

tsp
salt

large onions
2
cups
organic palm shortening
Instructions
Heat the 2 cups organic palm shortening over medium-high heat in a saucepan.
Stir together the dry ingredients, then add in the remaining ingredients, and whisk to combine.
Peel an onion, and slice into rings, then gently pull apart the rings.
Dip in batter and gently toss around to coat, then using a fork, place into hot oil.
Fry for 1-2 minutes, then flip over and fry another 1-2 minutes, until golden brown.
Remove to plate covered with paper towel and eat promptly.
