One Pot Paleo Chicken & Veggies!
I’ve been enjoying my social media & news respite, and for the past few weeks have been savoring the extra time, reduced stress and general sense of quiet.
My in-laws were watching our niece and nephew this past weekend, and running around after two energetic kiddos had them pooped. I invited them over for Sunday dinner, and made this delicious meal that served 11 of us (4 adults, 7 kids) with enough leftovers for our whole family the next day! All of the kids loved it (well, except my niece, but she pretty much only eats bread and fruit, so there’s that…), and that’s saying a lot! It made delicious leftovers the next day, and I ate it again for breakfast this morning! (Yes, I’m one of those weird people that can eat dinner for breakfast!)
This One Pot Paleo Chicken & Veggies was the perfect rainy day meal, and incredibly simple to make. It’s chock-full of deliciousness, and you could add in additional veggies if you have them on hand. It’s a great way to use up stuff in your fridge’s veggie drawer! Throw in some celery, leeks, beets, or any other favorite winter veggies to make this meal even more unique and perfect for your tastes!

Note: If you don’t need to serve a large party as we did, you could easily cut this recipe in half!
One Pot Paleo Chicken & Veggies

- 8 boneless, skinless chicken thighs
- 1 medium onion chopped
- 3 cloves garlic minced
- 1 14 oz can petite diced tomatoes
- 3 TBSP Save the Day Italian Seasoning + 1 TBSP, separated
- 2 tsp Himalayan or Sea Salt
- 3 medium carrots sliced
- 1 lb small round potatoes
- 2 TBSP avocado oil
- 2 cups organic chicken stock
Ingredients

- Heat oil over medium heat in a large dutch oven.
- Sprinkle chicken thighs on both sides with the 3 TBSP Italian Seasoning (see my recommended seasoning above), and brown quickly (in batches), then remove to plate (do NOT cook all the way through).
- Add onion, garlic, and carrots to dutch oven and stir occasionally until onions are translucent and fragrant, then add in tomatoes and cook another 5 minutes, stirring occasionally.
- Add potatoes and remaining Italian seasoning), stir to coat, then layer chicken thighs over the veggie mixture.
- Add in chicken stock and salt (do not stir), bring to boiling, then reduce heat to low, cover, and let simmer for about 2 hours.
- Once done, gently tear apart chicken (it should fall apart very easily), and serve!

Hi Shanti, thanks for the delicious looking recipe….I thought you were Paleo!….so why are you using potatoes which are NOT Paleo?

Hi, Mary! Potatoes are considered acceptable and are approved for the Whole30, which is strict Paleo. Please see the Whole30 updated guidelines HERE. However, I always tell people to do what works for them–if you do not respond well to potatoes, please feel free to eliminate! Thanks for the comment!

Eight thighs for 15 people?! I guess we are pigs LOL! The three of us eat two thighs each so we would have just a little left over. This looks good and easy, clean eating. We will give it a try.

I was thinking about buying the seasoning you recommended–is there a reason it’s better than just regular Italian seasoning from the store??

So glad you liked it, Suzanne! It’s definitely going into my meal rotation now! As for the seasoning, I am a HUGE fan of Save the Day Seasonings! Partly because it’s my brother’s business, but partly because I love that all the seasonings are gluten free and I don’t have to worry about weird ingredients. If I could recommend ONE seasoning to try, I would definitely recommend the “Alvi’s Incredible!” It’s a unique blend, and I’ve never found another seasoning blend that even comes close to it–we use it on everything: eggs, veggies, meats, pasta (GF of course!), and basically anything that is savory!

This sounds great! But could I also make it in a crockpot? Would the cooking time be the same?

Hi, Susan! Yes, you can do this in the crockpot. I would recommend still browning the thighs to sear in the juices, though. The cook time should still be the same!

I made this and it was great. Only one problem. 2 cups of liquid cooked out at almost 2hours and I almost* burned it. Luckily I caught it before it burned and added 2 more cups of water and some salt to compensate.

I just made this and it was so yummy! I made it in the Crock-Pot. Just threw all the ingredients in at once and cooked it for 6 hours.. delish! I also used breasts instead of thighs. Flavor was great!
