Disclaimer: This recipe is NOT Paleo. =) It is just a healthier version of an old favorite! It’s great for birthday parties or Halloween parties (Halloween’s only 2 months away!) or just for a special treat. This Healthier Caramel Corn has no refined sugars and tastes better than store-bought!

Ingredients
- 1 cup organic popcorn popped (I use coconut oil to pop mine)
- 1/2 cup grass-fed pastured butter
- 1 cup pure maple syrup
- 1 cup full-fat unsweetened coconut milk
- 1 dash of salt

Instructions
- Set popped popcorn aside into large bowl.
- Bring remaining ingredients to a boil, lower heat and simmer until temperature reaches about 220 degrees.
- Drizzle over popcorn and stir, continuing to drizzle and stir until caramel is used up.
- Preheat oven to 250 degrees and line a baking sheet with parchment paper (I needed 2 baking sheets) and spread the popcorn onto the baking sheets.
- Bake in oven at 250 degrees for about 20 minutes, then let cool completely before eating.
- Enjoy!

Do you think you could use coconut oil instead of butter? We have to be dairy free in our home due to allergies.

Hi, Kara! I haven’t tried it with coconut oil–I believe there have been a few people who have done ghee–do you eat ghee? If you end up trying it, please let me know how it turns out! Sorry I’m not more help!
