When I was growing up, I loved McDonald’s apple pies. But who loves these ingredients?
Apples, enriched flour (bleached wheat flour, malted barley flour, niacin, reduced iron, thiamin mononitrate, riboflavin, folic acid), water, shortening [palm oil, soy lecithin, artificial flavor, beta carotene (color)], sugar, high fructose corn syrup, contains 2% or less of the following: food starch-modified, sorbitol, dextrose, brown sugar, sodium alginate, sodium citrate, sodium phosphate, dicalcium phosphate, yeast, salt, dehydrated apple powder, natural (plant source) and artificial flavors, nutmeg, preservatives (may contain one of more of the following: ascorbic acid, citric acid, erythorbic acid), enzymes, hydroxylated soy lecithin, L-cysteine (dough conditioner), annatto and turmeric (color), caramel color. Topping: [cinnamon sugar (sugar, cinnamon)].
Not me, for sure.
I wanted to come up with grain free apple turnovers that were fried a bit to crisp up the “shell” and that my kids would love as much as I used to love those little apple pies.
This recipe is incredibly simple and will not disappoint even your harshest critic! The shell is light, crispy and flakey and the inside filling is divine!

- Outer Shell:
- Ā½ cup blanched almond flour
- Ā¾ cup tapioca flour arrowroot would work as well
- 1 cup full-fat unsweetened coconut milk
- 2 egg whites
- Ā½ cup water
- pinch salt
- Filling:
- 2 apples skinned and chopped fine (any type will do!)
- 3 TBSP coconut oil + 2 TBSP coconut oil separated
- 2 tsp cinnamon
- 4 tsp pure maple syrup
- 1 dash salt
Ingredients

- Heat a skillet over low heat with a small amount of oil and heat the 3 TBSP coconut oil over medium heat in a separate skillet.
- Stir together the dry ingredients, then add in the remaining ingredients.
- Spoon about 3 TBSP of batter into the first skillet, and swirl around gently to make into a flat crepe.
- After a minute or two, flip over and cook another minute or two.
- Remove and finish remaining wraps/crepes.
- Meanwhile, combine all the filling ingredients and cook in other skillet with the 3 TBSP coconut oil until the apples are tender.
- Once done, wipe out skillet and put the remaining 2 TBSP coconut oil in.
- Fill about 1/3 of the shell with apple filling, fold over, and press down the edges with a fork.
- Place in heated oil and fry for about 2 minutes per side, until golden brown.
- Remove to plate covered with paper towel and let cool for a few minutes before eating.
- Eat promptly. =)

what if you can’t have tapioca flour or arrowroot, can you increase the almond flour?

Hi, Kim! Unfortunately, the tapioca/arrowroot acts as a binder. Without it, it makes it difficult for the shell to hold together. =(

Wonder if psyllium powder might work. It gives a chewy texture too. I have had almond flour bread with the powder and they are chewy. I have no idea how much you might use

Since I AIP do you think coconut flour would work instead of almond?

Hi, Lupita! Unfortunately, coconut flour doesn’t sub 1:1 for almond flour–you could definitely try it and increase the eggs, but I haven’t experimented enough with that to give you direction. Sorry I’m not more help! =(

Hi, Robyn! I use the egg whites because it makes for a lighter shell. If you use the whole egg, they won’t be as light and flakey. =)

I can’t do coconut, but I do well with raw cow’s milk. Has anyone tried this recipe subbing cows milk or almond milk? These look amazing!
