Grain Free Apple Turnovers (Paleo, Gluten Free)
Ingredients
Outer Shell:

cup
blanched almond flour
¾
cup
tapioca flour
arrowroot would work as well

cup
full-fat unsweetened coconut milk
2
egg whites
½
cup
water
pinch
salt
Filling:
2
apples
skinned and chopped fine (any type will do!)

TBSP
coconut oil + 2 TBSP coconut oil
separated

tsp
cinnamon

tsp
pure maple syrup

salt
Instructions
Heat a skillet over low heat with a small amount of oil and heat the 3 TBSP coconut oil over medium heat in a separate skillet.
Stir together the dry ingredients, then add in the remaining ingredients.
Spoon about 3 TBSP of batter into the first skillet, and swirl around gently to make into a flat crepe.
After a minute or two, flip over and cook another minute or two.
Remove and finish remaining wraps/crepes.
Meanwhile, combine all the filling ingredients and cook in other skillet with the 3 TBSP coconut oil until the apples are tender.
Once done, wipe out skillet and put the remaining 2 TBSP coconut oil in.
Fill about 1/3 of the shell with apple filling, fold over, and press down the edges with a fork.
Place in heated oil and fry for about 2 minutes per side, until golden brown.
Remove to plate covered with paper towel and let cool for a few minutes before eating.
Eat promptly. =)
