This isn’t Paleo. But I do have a number of readers who don’t necessarily eat Paleo, just gluten free. Plus, one night last week, our family really wanted lasagna, and I thought, “What the heck? You gotta live a little!” This gluten free lasagna bake is easy and a serious comfort food!

Instructions
- Cook pasta until al dente.
- In a bowl, combine the ricotta, parmesan, spinach, garlic powder and salt.
- Place a thin layer of spaghetti sauce on the bottom of a 9x13 pan.
- Layer some pasta on the bottom of the pan, then place some of the ricotta mixture on top.
- Sprinkle with mozzarella cheese.
- Add more sauce.
- Repeat layers until all the ingredients are used up.
- Cover with foil and bake in a 350 degree oven for 45 minutes.
- Let cool for about 5 minutes before serving.
