Easy cheesy zucchini chicken
The other day it was about 2:00 and I didn’t know what I was going to make for dinner. I pulled some chicken breasts out of the freezer, thawed them in a bowl of room temperature water, and got to thinking about what to do with them. I had some fresh zucchini in my fridge, and after a few minutes, this idea was born.
It was probably one of the simplest recipes ever!
Just some chicken breasts, chopped zucchini, a jar of spaghetti sauce and some cheese and voila! Easy cheesy zucchini chicken was born.
My kids must have loved it, because they all had seconds. That’s when I know it’s good!
Never flattened chicken? I like flattening it when I’m baking breasts because it reduces the cook time and they cook more evenly. Here’s how to do it:

- 4 chicken breasts
- 2 medium zucchini chopped
- 1 jar of your favorite spaghetti sauce
- 2 cups shredded mozzarella cheese eliminate for dairy-free version or other favorite cheese
- 2-3 tsp garlic powder
- salt and pepper to taste
Ingredients

- Preheat oven to 350 degrees.
- Flatten chicken with a meat tenderizer, then lay side-by-side into a 9x13 pan.
- Sprinkle with garlic powder, salt & pepper.
- Cover with chopped zucchini, cheese, and then spaghetti sauce.
- Cover and bake for about 40-45 minutes, until chicken is done.
- Let cool for a few minutes before serving.
