These cookie dough truffles are made with the base of my 1-Minute Cookie Dough recipe, and is incredibly simple to make!
Who doesn’t love cookie dough? I don’t know anyone…(oh, if you don’t love it, then just keep your hand down). Of course, the nagging mom voice in all of us says, “Don’t eat the dough! It’s got raw eggs!” Well, friends, not this cookie dough! This cookie dough is grain-free, egg-free, and vegan!
My 1-minute Cookie Dough is one of the simplest desserts on my site. I thought I would jazz it up and make it into truffles. It’s an adorable dessert that is amazingly easy and like taking little bites of heaven!
Note: The key to making these smooth, like truffles is to sift the dry ingredients together before you mix them. You’ll get a delightfully velvety, delectable dessert!
Cookie Dough Truffles

- 2 cups blanched almond flour
- 1/4 cup tapioca flour or arrowroot starch
- 1/4 tsp salt
- 2-3 TBSP pure maple syrup or honey
- 1 tsp vanilla
- 1/2 cup coconut oil melted
- 1/4 cup soy-free dairy-free chocolate chips + soy-free, dairy-free chocolate chips (separated)
Ingredients

- Melt 1 cup chocolate chips in double boiler or microwave and set aside to cool slightly.
- Sift together the dry ingredients in a bowl.
- Add the coconut oil and stir.
- Then add the maple syrup or honey, vanilla and chocolate chips.
- Stir to combine, roll into balls, and place onto a baking sheet covered with parchment paper.
- Place in fridge for about 15 minutes.
- Remove from fridge, dip in melted chocolate, and place back in fridge for about 20-30 minutes, until chocolate has hardened.
- Enjoy!
These do best stored in the fridge, and will last a few days at least...if everyone doesn't gobble them up first!

Hi! You can’t sub out coconut flour for almond flour, sorry! It is a completely different flour and doesn’t cook the same!
