This baked scallops with parmesan recipe is easy and quick to make. It is gluten-free and grain-free, and makes a perfect dinner. It has a nice combination of scallops, parmesan cheese, butter, gluten-free breading, and spices. Normally, with most fish and seafood, it is best to buy wild instead of farm-raised, especially with shrimp and salmon. Fish farming is typically damaging to the environment, inhumane to the fish, and the farmed fish have way less nutrients. However, this is not the case with scallops. Scallop farming does not a big environment impact and farmed scallops have the same nutrients as wild, so it is okay to buy farm-raised scallops. (Source)

Ingredients
- 1 pound of Scallops thawed
- 1/2 cup Almond or Cashew flour
- 2 TBSP Grass-Fed Butter melted
- 1/2 cup Fresh Parmesan Cheese
- 1/2 teaspoon dried Oregano
- 1/2 teaspoon dried Thyme
- 1/2 teaspoon Onion Powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon Himalayan or Sea Salt

Instructions
- Preheat the oven to 375 degrees.
- Place the scallops into an 8 x 8 baking dish
- Pour the butter over the scallops, being sure to completely cover them.
- Grate the cheese.
- In a bowl, place the cheese, flour, spices, salt, garlic and onion powder and thoroughly mix.
- Pour this over the scallops.
- Mix everything up.
- Cook for 25 minutes.
- Serve and enjoy!

These were so awesome! I made it Whole30 compliant: I used ghee instead of butter, used fresh garlic, omitted the parmesan, and added lemon. I used awesome large scallops and they were perfect at 25 minutes in the oven. Made with a side of sautéed asparagus. OMG amazing. Seriously, the almond flour gave it such a good texture- I really felt like I was eating real breadcrumbs. Thank you!!!
