I think one of my favorite things about fall is pumpkins. Orange pumpkins, fairytale pumpkins, jack-o-lanterns…I just enjoy the colors. I love the book “From Seed to Pumpkin” (for the young ones) that tells all about the growth cycle of a pumpkin and has beautiful illustrations.
And of course, pumpkin pie. Especially cold. I love cold pumpkin pie!
I was in the mood yesterday for some fall. Even though it was about 95 degrees, I was in denial that the summer heat is still here and figured I should whip out the pumpkin to really ring in fall! So, I came up with these Pumpkin Cloud Cookies. When Superman ate them, he said, “It’s like I’m eating a pumpkin cloud!” Thus, the name. =)

- 2.5 cups blanched almond flour
- 1/2 cup coconut sugar
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1/2 cup pumpkin puree I just used canned
- 1/2 cup coconut oil or butter melted
- 1/2 tsp pure vanilla extract
- 3 tsp coconut sugar + 1 TBSP cinnamon mixed together, to sprinkle cookies
Ingredients

- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- Sift together the dry ingredients in a large bowl.
- In a small bowl, whisk together the egg, pumpkin, coconut oil and vanilla.
- Stir into dry ingredients until combined.
- Scoop out small portions, place on baking sheet and sprinkle with cinnamon/sugar mixture.
- Bake for 10-11 minutes, then let sit on cookie sheet for 4-5 minutes before putting on wire rack.
- Let cool on a wire rack for a few minutes before eating!

Can honey be used in place of coconut sugar?

You can use honey, but the cookies won’t have the same texture, as the coconut sugar is a granulated sugar. Let me know if you try it and how they turn out!
