It’s time for my March freezer meals!
You all are probably starting to recognize my friend Jordanna now. ? We get together every month or so to prep freezer meals (always gluten-free, usually Paleo, sometimes Whole30). She will often invite another friend or two to join us, and I love it! It’s a great way for me to get to know some new people, while getting to help show others how simple and fun it can be to prep meals with friends!
This month, I got to meet Cyndi and Lindsay! We had a blast chatting and prepping meals, and getting to know each other while we chopped veggies and meat. It usually takes us about 1.5-2 hours to prep 10 meals (5 meals, doubled).
Without further adieu, here are this month’s meals!
March Freezer Meals
Chicken “Enchilada” Casserole (Gluten-free, not Paleo)
2 cups uncooked rice
½ cup olive oil
2 TBSP tapioca starch or corn starch
¼ cup chili powder (adjust according to taste)
2 cans (15 oz) tomato sauce
3 cups water
1/2 tsp ground cumin
1/2 tsp garlic powder
½ tsp fine grain sea salt
2 lbs chopped chicken breasts
3-4 cups shredded cheese
Combine all ingredients except water in a large Ziploc bag.
When ready to cook, thaw overnight. Add to a deep 9×13 pan, add 3 cups water, cover with aluminum foil and bake for about 1 hour at 375 degrees.
The Grub Meatballs from 10-Minute Prep Paleo Freezer Meals
3 lbs ground beef
2 TBSP garlic salt
1 onion, diced small or grated
2-3 stalks celery, diced very small
2 eggs
3 TBSP chopped cilantro
2-3 TBSP olive oil
Heat oil in large skillet over medium-high heat.
In a large bowl, combine all remaining ingredients and mix with hands until well incorporated.
Form into golf ball-sized meatballs (or a tad larger).
Lay in single layer on baking sheet and freeze until hard.
Store in large Ziploc bags.
To thaw: put in fridge the night before you will use them. If you forget, just defrost a bit in microwave, then cook as directed below. =)
Place into heated pan and cover for about 6 minutes.
Remove lid, flip meatballs over with tongs, and cook, uncovered, for another 4-5 minutes. Remove and set aside and repeat with remaining meatballs.
Paleo Mediterranean Steak from Once a Month Meals
½ teaspoons Garlic Powder
1 teaspoon Sage, Dried
½ teaspoons Rosemary, Dried
½ teaspoons Sea Salt
1 teaspoon Black Pepper
1 teaspoon Thyme, Dried
½ tablespoons Olive Oil
2 pounds Beef Steak

Crockpot Lamb Curry from 10-Minute Prep Paleo Freezer Meals
2 lbs boneless lamb (cut into 1-inch cubes) or lamb stew meat or another favorite stew meat
3 TBSP curry powder
2 tsp paprika
2 tsp salt
2 tsp ground black pepper
2 tsp cumin
2 TBSP coconut oil
4 cloves garlic, minced
1 large onion, diced
½ cup full-fat, unsweetened coconut milk
Combine all ingredients in a large Ziploc bag and toss to coat, then place in freezer. When ready to cook, thaw in refrigerator overnight, then cook in slow cooker on low for 3-4 hours.
Simple Italian Chicken
3-4 lbs boneless, skinless chicken thighs
3 TBSP avocado or olive oil
3-4 TBSP Save the Day Italian seasoning
2 tsp salt
Combine all ingredients in large Ziploc bag. When ready to cook, thaw overnight. Broil in oven a few inches from heat for 4-5 minutes per side. Enjoy!

I stumbled upon your site as I searched for new Whole30 recipes. I saw the picture of you and your friends prepping freezer meals and immediately recognized Jordana! I thought I was crazy, and then you mentioned her name in the caption. We went to Family Camp for many years on Catalina Island with she and her family and Bayside family. WOW, what fun to see her here!
