Grain free peach cobbler
Ah, summer peaches. There’s nothing like them. Whether you like to pull a fresh peach off the tree or cook them into a cobbler or pie, a ripe peach is sweet, heavenly goodness.
Superman was craving peach cobbler yesterday. Of course, it being Father’s Day today, I needed to help him out with that. This grain free peach cobbler is so quick to throw together and Superman says, “It’s moist and succulent!”

- 6 medium to large peaches peeled and sliced
- 1/4 cup coconut sugar
- 1/4 cup honey
- 1 tsp cinnamon
- 1/2 tsp salt
- Topping:
- 1 cup blanched almond flour
- 1/2 cup coconut flour
- 1/4 cup coconut sugar
- 1 tsp cinnamon
- 1/2 cup softened butter or coconut oil
Ingredients

- Preheat oven to 350 degrees.
- In a large bowl, mix together the peaches, coconut sugar, honey, cinnamon and salt.
- Pour into a 10-inch cast iron skillet and place in oven for about 10 minutes.
- While that's cooking, make the topping:
- Stir together the almond flour, coconut flour, coconut sugar and cinnamon.
- Using a fork, cut in the softened butter or coconut oil until the mixture is crumbly.
- Remove peaches from oven, and top with topping.
- Place back in oven and bake for another 20-30 minutes, until golden brown on top.
- Let sit for about 10 minutes before serving.

well, geez. now i’m sad i passed up the peaches at the farmer’s market today! they were only sold as a group of eight and knew i couldn’t eat that many by myself! haha i asked the girl for two and she said no. boo. next week, i will buy the whole box so i can make this! it looks amazing!

I made this tonight. I didn’t read the instructions, just whipped up the ingredients and dumped in a pan. Because of this, I did not do the 10 minutes in the cast-iron skillet with the peaches only. I will definitely try to next time. I bet it makes the peaches so much sweeter. Great recipe.:-)

I love how simple this recipe is! I didn’t find it needed any sweetener at all to make it taste delicious. I used homegrown peaches that were sweet on their own. Since I often use frozen peaches (cuz we get so many at once that’s how we preserved them), I add 1-2 TBS of arrowroot or tapioca to thicken up the all the juice that has come out. While my husband and I love this recipe, the kids don’t care for the topping 🙁 Guess I’ll make one crisp when I make this 😉

The topping was grainy, not smooth. After cooking the peaches there was so much liquid. It turned out to be more like a crisp than a cobbler but the texture wasn’t good. Not sure what I did wrong.
