Recipe: Frozen Banana Berry Sandwich Bites
3 ripe bananas
1/2 cup frozen blueberries
1/2 cup frozen strawberries
2 TBSP full-fat, unsweetened coconut milk
Cut each banana in half and then slice length-wise in half. In a food processor, blend together the frozen blueberries, strawberries and coconut milk. Top 1/2 of the bananas with the fruit mixture. Place the other half banana on top, stick a toothpick in them to hold them together and quickly place in freezer. Freeze for 45 minutes to an hour. Remove and slice into bite-size pieces and eat promptly!
