I’m actually not a huge fan of Almond Joy, even back in my SAD (Standard American Diet) days it wouldn’t have been my candy bar of choice. But after making THESE a few weeks ago, I was thinking of what else to put in the middle. And I thought a chewy coconut center might just be da bomb. And it is. And they’re a perfect treat to share with your valentine!
Recipe: Copycat Almond Joy Bites (makes 12-13)
1 bag dairy-free, soy-free chocolate chips
1/3 cup unsweetened shredded coconut
2 TBSP pure maple syrup or honey
1/4 cup finely chopped almonds (I used slivered almonds and then just chopped them smaller)
1 TBSP unsweetened, full-fat coconut milk
12-13 mini muffin cups
In a double boiler, melt the chocolate chips. While that’s melting, in a small bowl combine remaining ingredients. Spoon a bit of chocolate into each muffin cup. Add some of the coconut mixture on top, and then top the whole thing off with more chocolate. Set in fridge to chill, and be careful not to gobble the whole batch up!!

Do these count towards the paleo diet? i figure they would since they are dairy free and grain free
Depends on how strict you are. I count them as acceptable since there is no soy, dairy or grains, but I suppose technically they have cane juice in the chocolate chips, so aren’t “strict” Paleo. Hope that helps!

I just made these. I ended up with 18 minis. I had a bit of chocolate and filling left so I mixed the two and ate it off of the spatula. YUM! As Petty says…the waiting is the hardest part.
I sort of made these today for the sweetheart. I skipped the almonds and made two batches of the filling. Then I mixed the first batch in the with the melted chocolate to make a kind of chocolate dough. I pressed the “dough” into little patties, put a blob of the second batch of filling in the center, and put another patty on top, sealing the edges. Cute little kind of chewy chocolate mounds filled with coconut-y goodness. A sprinkle of leftover mixture on top makes them rather pretty and festive.
