It’s a cinnamon-y, baking kinda day here. So here’s a recipe I came up with to satiate my taste buds!
Recipe: Cinnamon Apple Cookies (Makes about 30 cookies)
1/2 cup butter or coconut oil
1/4 cup pure maple syrup
1 apple, peeled, cored and cut into fourths
1 tsp pure vanilla extract
2 cups almond flour
2 TBSP cinnamon
1 tsp baking soda
1/2 tsp salt
Preheat oven to 350 degrees. In a food processor, puree the butter (or coconut oil), syrup, apple, vanilla and egg. In a separate bowl, combine almond flour, cinnamon, salt and baking soda. Pour in wet ingredients and stir until combined. Scoop onto a parchment paper-covered baking sheet and bake for about 10 minutes. Cool on wire rack, and gobble up!

I’m SO making these today!
I just made a batch of these and they tasted great, BUT – they don’t look at all like the ones in the photo. Mine were completely flat and fall apart when you try to pick them up. Any suggestions on where I may have gone wrong? I used butter.
Hmmm…odd? Did you melt the butter before pureeing it? If it was melted, that could have contributed to it?
Maybe old baking soda?
I just made these and they taste delicious!! However, I had the same problem where they were very delicate. I used the coconut oil. They were very light which was nice because then they’re not as filling but I think they were a little too light and fell apart if you picked them up. Any suggestions?
Hmmm…I’m not sure? I need to remake them and see if I have that problem. I’m sorry they were so delicate! I’m not sure why they would be crumbly…perhaps if the apple had more liquid in it…so sorry I’m not more help!
I’ve made these a number of times and they’re amazing but I also have found they’re too delicate for cookies (I use coconut oil) so now I just make them as muffins – perfect!
