Some of you may have seen on my Facebook page that Superman has been drinking raw milk for the last few weeks and seems do be doing well with it! This was a huge step in his healing, as he has not been able to tolerate dairy for years now. So, I figured I would make some ice cream today that featured both coconut and raw milks. You could make this purely with coconut milk, or combine different dairy-free milks however you like. I wanted to use raw cream, but at $12.50 for a small bottle, I had to come up with a cheaper alternative!
Recipe: Cantaloupe Ice Cream
1 can unsweetened coconut milk
2 cups raw milk (or any other type of milk–almond, goat, coconut)
3 cups ripe cantaloupe, cut into chunks
1 TBSP pure vanilla extract
1 TBSP pure maple syrup
Combine all ingredients in a blender and process until smooth. Pour into ice cream maker and follow manufacturer’s directions. Enjoy!
