This recipe does have a little cook time, but I whipped mine up, put it in the oven, and showered while it was baking. It’s all about multi-tasking!
Recipe: Breakfast for One
2 eggs
1/2 Aidells Chicken Apple Sausage, chopped
1/2 tsp minced jalapeño
2-3 TBSP chopped broccoli
salt/pepper to taste
coconut oil to grease
Preheat oven to 350 degrees. Grease ramekin with coconut oil. Whisk together eggs, then add remaining ingredients and stir. Pour into ramekin, place onto baking sheet (in case it overflows) and bake 20-25 minutes, or until egg is set and top is golden brown. Let cool for a few minutes before eating.

I make these by the dozen and eat them all week. They keep well and are portable if necessary. I use zuchini, onion, garlic, bellpepper and satuee it first then put it in the egg tin and I put ham or bacon sometimes then top with the egg mixture. I put dried or fresh herbs like thyme, salt, pepper in mine. Sometimes I will put green onions also. Yummy!
