Easy cheesy zucchini chicken The other day it was about 2:00 and I didn't know what I was going to make for dinner. I pulled some chicken breasts out of the freezer, thawed them in a bowl of room temperature water, and got to thinking about what to do with them. I had some fresh zucchini in my fridge, and after a few minutes, this idea was born. It was probably one of the simplest recipes ever! Just some chicken breasts, chopped zucchini, a jar of spaghetti sauce and some cheese and ... continue reading...
Our Gluten Free Cookout
Last week I shared some Pillsbury gluten free cookies on my blog and noted that while boxed mixes are not commonplace in our home, having them on hand was really helpful for my kiddos' adoption day. Sometimes I take my kids out for ice cream. Sometimes I eat cereal for dinner. And *gasp* every once in awhile I resort to the easiest ... continue reading...
The day I offended Facebook
Last week, I shared a post on Facebook about an upcoming webinar I'm presenting on "Healing Inflammation Naturally." Since reach on Facebook nowadays is dismal at best (with more than 15,000 followers on Facebook, I'm lucky if a few thousand of those actually see my posts), I wanted to be sure to at least inform the people following my page that I am offering this webinar, I attempted to "boost" it so that more people would see it in their newsfeed. One awesome woman in our group owns her own business, Timmi's Treats, a "cookie boutique," and she makes amazing (unfortunately not gluten free yet!) cookies for people. She and her husband Kevin are one of the sweetest couples I've had the honor of spending time with, and when they told me about their son (Nick) and daughter-in-law's business, Sovereign Sandals, I knew I ... continue reading...
Obama goes gluten free and signs bill forcing restaurants to change

Not only that, but he is ready to make restaurants nationwide switch their menus to gluten-free offerings as well. Every chain restaurant, from McDonald's to Round Table Pizza will be required (beginning July 1, 2016) to switch any gluten-containing items to gluten-free. Not only that, but restaurants will no longer even be ... continue reading...
