Ingredients
- 1/2 cup blanched almond flour
- 1/2 cup tapioca flour
- 1/4 cup unsweetened cocoa powder
- 1 cup full-fat unsweetened coconut milk
- 2 egg whites
- 2-3 TBSP pure maple syrup
- 1/2 cup water
- 1-2 TBSP avocado or olive oil

Instructions
- Heat oil in a skillet over medium heat.
- Stir together the dry ingredients.
- Add in the coconut milk, egg whites, syrup and water and whisk until well combined.
- The batter should be runny--if it still seems thick, you can add a bit more water.
- Pour a little less than a 1/4 cup of the batter into skillet, and then swirl skillet around to spread the crepe out.
- Let cook for a few minutes, then flip over and cook for a few minutes more.
- Fill with whatever you like--berries, full-fat whipped cream, or anything else!
