Ingredients
1/2
cup
blanched almond flour
1/2
cup
tapioca flour
1/4
cup
unsweetened cocoa powder
1
cup
full-fat unsweetened coconut milk
2
egg whites
2-3
TBSP
pure maple syrup
1/2
cup
water
1-2
TBSP
avocado or olive oil
Instructions
Heat oil in a skillet over medium heat.
Stir together the dry ingredients.
Add in the coconut milk, egg whites, syrup and water and whisk until well combined.
The batter should be runny–if it still seems thick, you can add a bit more water.
Pour a little less than a 1/4 cup of the batter into skillet, and then swirl skillet around to spread the crepe out.
Let cook for a few minutes, then flip over and cook for a few minutes more.
Fill with whatever you like–berries, full-fat whipped cream, or anything else!
