Light and fluffy, this Lemon Coconut Cloud Cake is heavenly!

Ingredients
- 4 cups blanched almond flour
- 1 cup unsweetened shredded coconut
- 1 tsp salt
- 1 tsp baking soda
- 2 eggs
- 1/2 cup coconut oil
- 1 tsp pure vanilla extract
- 1 tsp lemon extract
- 3/4 cup pure maple syrup
- 1/2 cup unsweetened full-fat coconut milk
- coconut oil for greasing

Instructions
- Preheat oven to 350 degrees and grease two 8-inch round cake pans with coconut oil. Combine the dry ingredients in a large bowl.
- Whisk together the eggs, coconut oil, vanilla, lemon extract, syrup and coconut milk.
- Stir into dry ingredients until combined.
- Spread into cake pans, and bake for 20-25 minutes.
- Let cool completely before removing from pans and frosting, if desired.
