Artichokes are one of Superman’s favorite foods. I used to just boil them and serve. But awhile back, I came up with a baked Lemon Pepper Artichoke recipe that was really good. I wanted more, though!
These are probably the best artichokes I’ve ever had. The butter, garlicky, cheesy sauce drizzles down into the crevices and coats each leaf, and the top is crusted with parmesan. Don’t be put off by having to boil these first–they are well worth the effort!

Ingredients
- 4 artichokes
- 1/2 cup butter or ghee grass-fed is best!
- 1 clove garlic
- 1/4 cup grated parmesan cheese + more for sprinkling
- salt to taste

Instructions
- Bring a large pot of water to a boil.
- Cut stem off artichoke, and cut across the top of the artichoke to make it flat (see photo above).
- Place in boiling water and boil for about 15-18 minutes.
- While those are cooking, preheat oven to 425 and line a baking sheet with foil.
- Carefully remove artichokes from water and place, open side-up, on baking sheet.
- In a blender, blend the butter or ghee, garlic, parmesan cheese and salt until combined.
- Pull the leaves apart a bit and drizzle the butter mixture evenly over each artichoke, making sure it drizzles down into the crevices.
- Sprinkle with more parmesan cheese and bake in oven for another 15 minutes, until cheese is golden brown.
- Let cool for a few minutes before serving!

Hi, Ted. I provide my recipes free of charge, and as a homeschooling mom of five, just don’t have the time to add this additional feature. I believe there are sites out there where you can plug in the ingredients and get that information, though. Hope that helps!

Hi, Jill! That should be fine! It may not be as “crusty” as freshly out of the oven, but should still taste great!

Could I boil one day, then next day pour butter mixture over too and bake second day? Keep them in fridge until the next day before I bake? Just a thought.
