Buttery Parmesan Baked Artichokes

  1. Bring a large pot of water to a boil.
  2. Cut stem off artichoke, and cut across the top of the artichoke to make it flat (see photo above).
  3. Place in boiling water and boil for about 15-18 minutes.
  4. While those are cooking, preheat oven to 425 and line a baking sheet with foil.
  5. Carefully remove artichokes from water and place, open side-up, on baking sheet.
  6. In a blender, blend the butter or ghee, garlic, parmesan cheese and salt until combined.
  7. Pull the leaves apart a bit and drizzle the butter mixture evenly over each artichoke, making sure it drizzles down into the crevices.
  8. Sprinkle with more parmesan cheese and bake in oven for another 15 minutes, until cheese is golden brown.
  9. Let cool for a few minutes before serving!
