A disclaimer: These are a treat. I suggest being very careful. They are sweet and delicious, and should be eaten with caution.
Recipe: Maple Coconut Cookies
1/2 cup butter or organic palm shortening
3/4 cup pure maple syrup
1 egg
1 TBSP pure vanilla extract
1.5 cups almond flour
1 tsp baking soda
1/2 tsp salt
1 cup unsweetened coconut flakes/shredded coconut (or substitute 1 cup finely-chopped nuts if you don’t do well with coconut)
Preheat oven to 350 degrees. In a large bowl, beat together butter (or shortening), maple syrup, egg and vanilla. In a separate bowl, stir together almond flour, baking soda, salt and coconut flakes (or chopped nuts). Add dry ingredients to the wet ingredients and beat until combined. Scoop out rounded tablespoons (or use a cookie scoop) onto a parchment paper-covered baking sheet. Bake for about 8 minutes, remove and let cool on baking sheet for 2-3 minutes. Remove to rack to cool.

Recipe: Maple Coconut Frosting
3/4 cup coconut cream concentrate
1/4 cup pure maple syrup
2 TBSP unsweetened coconut milk (from a can)
Combine all ingredients in a small saucepan and heat over low until melted. Scoop a spoonful on top of a cookie, and press another cookie on top. Divine!

Hello! I have made these twice now, and I love them!! however mine never set-up like your picture. I use Kerrygold butter in mine and follow the recipe exactly. And it seems to me like they melt so fast that the don’t hold any shape and then get really crispy around the edges. Any advice?

Hmmm…not sure? Have you tried reducing the heat by about 25 degrees and allowing them to cook longer? It could be that your oven is hotter than mine and is cooking them too fast. If they are getting too flat, you could add a bit more almond flour to see if they puff up a bit more. Is that what you mean by melting?

I only have coconut oil can that be used instead of palm shortening or butter?

That will work! They may not be quite as “buttery” but they should still be good!
