I’m kind of a sucker for Almond Roca. Usually, this time of year, Costco carries a big tin of it. Last year, I bought one, and I would periodically grab a few. I always regretted it afterwards–usually, headaches and brain fog ensued.
I set to work to come up with a copycat Paleo Almond Roca recipe that would taste amazing, but leave out all the icky side effects. Mostly because I’m lazy, I decided to make these into bars. You could definitely pour the mixture out onto some parchment paper, form into “rolls” and dip in chocolate if you so desire, but as a mom of five kids, I’m all about simple. =)
The best thing? This recipe only has four ingredients!

- 2 cups slivered almonds I buy THIS kind at Costco
- 1.5 cups pure maple syrup
- 1 tsp pure almond extract
- 3/4 cup Enjoy Life chocolate chips melted
Ingredients

- Place the slivered almonds into a Ziploc bag.
- Cover the bottom of an 8x8 glass pan with parchment paper.
- In a saucepan, heat the syrup over medium-high heat.
- While that is boiling, smash the slivered almonds into smaller pieces.
- Boil until a candy thermometer is around 240 degrees, or the "soft ball" phase.
- Stir in the almonds and almond extract and quickly stir together.
- Pour the mixture into the glass pan and let cool for a few minutes.
- When cooled, baste with the melted chocolate chips, and let cool to harden.
- Enjoy!

I’m just wondering if you could give an approximate time on boiling the maple syrup? I don’t own a candy thermometer and the last time I tried to make almond roca with maple syrup (different recipe) it didn’t cook for long enough and came out more gooey. Thanx!

Hmmm. I can’t remember off the top of my head, but I want to say it was maybe like 25 minutes? It should definitely be starting to thicken. Sorry I’m not more help. I hate estimating time just because different temperatures/stoves can make a big difference, and the best way is to have an accurate temperature. Sorry!
