{Nearly} Paleo Almond Roca Copycat Bars

Ingredients
2
cups
slivered almonds
I buy THIS kind at Costco
1.5
cups
pure maple syrup
1
tsp
pure almond extract
3/4
cup
Enjoy Life chocolate chips
melted
Instructions
Place the slivered almonds into a Ziploc bag.
Cover the bottom of an 8×8 glass pan with parchment paper.
In a saucepan, heat the syrup over medium-high heat.
While that is boiling, smash the slivered almonds into smaller pieces.
Boil until a
candy thermometer
is around 240 degrees, or the “soft ball” phase.
Stir in the almonds and almond extract and
quickly
stir together.
Pour the mixture into the glass pan and let cool for a few minutes.
When cooled, baste with the melted chocolate chips, and let cool to harden.
