It was a Monday afternoon at 3:30 and I had no idea what I was going to make for dinner. I had chicken tenderloins in my fridge and some parmegiano reggiano. But I wanted a bit of flavor.
So, I decided to throw some curry in the mix. The result was fantastic! These Parmesan Curry Chicken Fingers were a hit with everyone in the family, kids included! A perfect weeknight meal, especially for those nights when you are pressed for time! These only took about 10 minutes from start to finish!

Ingredients
- 2-3 lbs chicken tenderloins
- 4 TBSP of your favorite curry powder (THIS is the one I used and we LOVED it!)
- 1/2 - 3/4 cup parmegiano reggiano optional if you want to make this dairy-free
- salt to taste

Instructions
- Line a baking sheet with foil and turn your oven broiler on.
- Lay the chicken tenderloins in a single layer on the baking sheet.
- Sprinkle with curry powder, salt and parmegiano reggiano cheese.
- Broil in oven, a few inches from heat, for 4-5 minutes, then flip over.
- Sprinkle with curry powder, salt and cheese again, then broil for another 3-4 minutes, until done and cheese is crisped and golden.
- Serve over rice or your favorite substitute!
