Ingredients
2-3
lbs
chicken tenderloins
4
TBSP
of your favorite curry powder
(THIS is the one I used and we LOVED it!)
1/2 – 3/4
cup
parmegiano reggiano
optional if you want to make this dairy-free
salt
to taste
Instructions
Line a baking sheet with foil and turn your oven broiler on.
Lay the chicken tenderloins in a single layer on the baking sheet.
Sprinkle with curry powder, salt and parmegiano reggiano cheese.
Broil in oven, a few inches from heat, for 4-5 minutes, then flip over.
Sprinkle with curry powder, salt and cheese again, then broil for another 3-4 minutes, until done and cheese is crisped and golden.
Serve over rice or your favorite substitute!
