Paleo fish sticks
My kids have been begging for fish sticks. I grew up eating Gorton’s fish sticks, and my kids did, too–until we changed our diet. And we pretty much haven’t eaten fish sticks since. Until my Paleo fish sticks.
Paleo fish sticks are hard to come by–finding a batter that would stay on the fish throughout the frying process took a little work, but eventually it happened. I could not cook these fast enough! I would place a couple on a plate, and before the next batch was done, they were gone!
I served these with my homemade tartar sauce and had the happiest kids in the world!

- ½ cup blanched almond flour
- ¾ cup tapioca flour arrowroot would work as well
- 1 cup full-fat unsweetened coconut milk
- 2 egg whites
- ½ cup water
- juice of 1 lemon
- 1 pinch salt
- 1 pinch black pepper
- 2 cups organic palm shortening
- 2 lbs cod cut into strips
Ingredients

- Heat the 2 cups organic palm shortening over medium heat in a saucepan.
- Stir together the dry ingredients, then add in the remaining ingredients.
- Dip cod into batter and stir to coat.
- Using tongs, place carefully into hot oil.
- After 2-3 minutes, flip over and cook another 2-3 minutes.
- Remove and place on plate covered with a paper towel.
- Repeat until fish is all done cooking.
- You won't be disappointed in these!

These were great! Only had .7 lbs of cod so I halved the batter recipe & still had way too much, probably halve would have been plenty even if I had 2 lbs of fish. My husband & daughter all loved these & got the health benefits of wild Alaskan cod! Will definitely be making this again thanks for the recipe!
