It’s that time of year! The wild blackberry plants along our driveway are brimming with plump, fresh blackberries, just waiting to be picked.
For Father’s Day, our kids wanted to go blackberry picking to make a special treat for Superman. He’s a big fan of cobbler, so that’s what we decided to make!
This gluten free blackberry cobbler took only a few minutes to put together, and was bubbling with delicious goodness after just about a 1/2 hour in the oven! The topping was probably the best gluten free cobbler topping I’ve tried…crisp and chewy all at the same time! Serve with some dairy-free whipped cream or homemade ice cream for an extra special treat!

- 5-6 cups fresh blackberries
- 2 TBSP lemon juice
- 3 TBSP + 3/4 cup organic sugar separated
- 1 egg
- 1 cup gluten-free 1 to 1 baking flour
- 1/2 cup butter melted
Ingredients

- Preheat oven to 350 degrees.
- Toss together blackberries, 3 TBSP sugar and 2 TBSP lemon juice and pour into an 8x8 glass baking dish.
- In a separate bowl, stir together the 3/4 cup sugar, egg and GF flour with a fork until crumbly, then spread over blackberries.
- Drizzle butter evenly over topping.
- Bake for 30-35 minutes, until golden brown and bubbling.
- Let cool for a few minutes before serving, and enjoy!
