Garlicky Zoodles with Slivered Almonds

These Garlicky Zoodles with Slivered Almonds are simple to make, and are a fun way to use up that zucchini! I use this spiral vegetable slicer to make these and every time I pull it out, I feel giddy!  spiral vegetable slicer  

Garlicky Zoodles with Slivered Almonds

Simple to make, and a low-carb solution for pasta!
  • 3 large zucchini, peeled and ends removed
  • 3-4 TBSP garlic olive oil (if you don't have this, you can cook a few cloves of garlic over low-medium heat with regular olive oil for about 7-8 minutes beforehand, and then use that!
  • pinch red pepper flakes
  • salt & pepper to taste
  • ¼ cup slivered almonds (if you don't have slivered on hand, just slice up some almonds)
  1. Take the prepared zucchini (ends cut and peeled) and using your spiral vegetable slicer, spiralize your 3 zucchini.
  2. Heat oil in a large skillet or wok and add the zucchini, red pepper, salt & pepper and ½ the almonds.
  3. Cook for about 10 minutes, stirring frequently, until tender.
  4. Remove to serving tray and sprinkle with remaining almonds.
  5. Enjoy!
