It’s soup time! This time of year begs for warm soup.
This creamy Paleo ham and potato soup tastes like it has dairy, but it doesn’t. It’s creamy, full of flavor, and the perfect way to warm your tummy on a cold winter day!
* Note: If you are avoiding white potatoes, you can most definitely replace those with sweet potatoes!

Ingredients
- 2 lbs ham hocks
- 4 cups chicken broth
- 4 cups water
- 1/2 cup chopped onion
- 4-5 cups chopped potatoes or sweet potatoes
- 2 tsp salt
- 1 tsp ground black pepper
- 1/4 cup tapioca flour
- 2 cups almond or coconut milk + 1/4 cup butter (optional)

Instructions
- Add everything except the tapioca flour and almond/coconut milk and butter to a large pot.
- Bring to a boil, then reduce heat to a low simmer.
- Cook until the potatoes are tender.
- Whisk together the tapioca flour and about a 1/2 cup of almond/coconut milk.
- Add the rest of the almond/coconut milk to a saucepan and stir in the flour/milk mixture and butter (if using).
- Cook until thickened, then stir into the soup.
- Let cook for a few minutes, until slightly creamy and thickened.
