  1. Add everything except the tapioca flour and almond/coconut milk and butter to a large pot.
  2. Bring to a boil, then reduce heat to a low simmer.
  3. Cook until the potatoes are tender.
  4. Whisk together the tapioca flour and about a 1/2 cup of almond/coconut milk.
  5. Add the rest of the almond/coconut milk to a saucepan and stir in the flour/milk mixture and butter (if using).
  6. Cook until thickened, then stir into the soup.
  7. Let cook for a few minutes, until slightly creamy and thickened.
