Ingredients

lbs
ham hocks
4
cups
chicken broth
4
cups
water
1/2
cup
chopped onion
4-5
cups
chopped potatoes or sweet potatoes

tsp
salt

tsp
ground black pepper
1/4
cup
tapioca flour
2
cups
almond or coconut milk
+ 1/4 cup butter (optional)
Instructions
Add everything except the
tapioca flour
and almond/coconut milk and butter to a large pot.
Bring to a boil, then reduce heat to a low simmer.
Cook until the potatoes are tender.
Whisk together the
tapioca flour
and about a 1/2 cup of almond/coconut milk.
Add the rest of the almond/coconut milk to a saucepan and stir in the flour/milk mixture and butter (if using).
Cook until thickened, then stir into the soup.
Let cook for a few minutes, until slightly creamy and thickened.
