Who woulda thought that Thai flavors + a grilled chicken recipe could be so amazing?
The other day the weather was beautiful, and the grill was calling my name. I had some chicken thighs, but didn’t want to just have plain ol’ chicken. I was craving something with a little flavor, maybe even a little kick. So, I decided to combine some Thai flavors to come up with an amazing marinade for this Thai Grilled Chicken Recipe. It was so delicious, my kids ate the chicken to the bone!
It’s a simple recipe: just combine all the ingredients, marinate for at least an hour, then throw on the grill!

- 12 chicken thighs bone-in
- 2 TBSP crushed ginger
- 2 TBSP minced garlic
- 2 tsp crushed red pepper flakes add more if you like it spicy!
- 2 tsp salt
- 4 TBSP coconut aminos (you can buy this at Whole Foods as well for about $6/bottle where I am)
- 4 TBSP Red Boat fish sauce
- 1/3 cup olive or avocado oil
- 2 TBSP coconut sugar
Ingredients

- Combine all ingredients except the chicken in a bowl.
- Add chicken to a large glass dish and pour marinade over chicken, tossing to coat.
- Refrigerate for at least one hour, stirring at least once.
- Grill as directed on your BBQ, until juices of chicken run clear, and enjoy!

Hi! I made these last night and they were really great! We intended to grill, but with some storms anticipated, I opted to bake them instead. 375 for 25 minutes, then flipped over for 10 minutes and broiled for 5 minutes. They turned out really good and I would love to try them on the grill sometime. Thanks for the recipe!

Hi, Kim! You could just bake these in the oven for 20-25 minutes at about 350 degrees, and broil for the last 5 minutes to get a similar result. =)
