This time of year is a killer if you’re a sucker for sweet stuff. We have a place called Apple Hill not too far from where we live with over 50 farms and ranches growing all types of apples. But with the apples come apple pies, apple fritters, apple donuts…you get the picture. Apple season calls for apple treats! But, eating apple donuts at Apple Hill will kill my tummy later, and it’s just not worth it.
I had yet to come up with a grain free donut recipe that I was excited about. This morning, for Happy October Day (a tradition I started probably seven or eight years ago where we have fun, eat treats and put up our fall decorations), I decided I would tackle apple donuts. The kids gobbled them up and begged for more! Definitely a keeper recipe!

- 1.5 cups blanched almond flour
- 1/4 cup tapioca flour
- 1/4 tsp baking soda
- 1 tsp cinnamon
- 2 tsp gluten-free cornstarch-free baking powder
- 1/4 cup pure maple syrup
- 1/2 tsp pure vanilla extract
- 2 TBSP butter or coconut oil melted
- 2 tsp apple cider vinegar
- 1 medium apple peeled and finely grated. (I used THIS to grate mine)
- 2 eggs
- For the drizzle:
- 1 cup unpasteurized fresh apple juice
- 1 tsp heapingtapioca flour
- 1 pinch of cinnamon

- Preheat oven to 350 degrees and grease a donut pan (THIS is the one I have) with butter or coconut oil.
- Sift together the dry ingredients.
- Whisk together the syrup, vanilla, butter or coconut oil, apple cider vinegar, grated apple and eggs, then add to the dry ingredients and stir to combine.
- Distribute the batter evenly into the molds, then bake for 12-14 minutes, until golden brown.
- While those are baking, make the drizzle by adding the juice and tapioca flour to a saucepan.
- Cook over medium heat until boiling, then reduce heat a bit and cook for a few more minutes until it is slightly thickened. If you want a thicker glaze, you can add a bit more tapioca starch.
- Remove from oven, allow to cool for a few minutes before gently removing from pan onto wire rack. I used a spatula to help release the donuts.
- Let sit for about 5 minutes, then drizzle with the apple juice glaze.
- Eat while warm for best results!

When my 2 year old takes a bite from every apple in the bowl what else do you do? Make donuts. I’ve tried sooo many recipes and very grateful to have found this one. Easy. And all ingredients are in the kitchen. Will definitely make again.
